BUTTER opened in Surry Hills, Sydney in 2016 by founder and CEO / CMO Manoli Politis and owner, COO and executive chef Julian V. Cincotta. As they gained popularity, they were able to open up two more locations in Sydney suburbs Parramatta and Chatswood. They also have a pop-up shop in the Rocks by the harbor front.

The two met when Manoli asked Julian to be a menu development consult at Manoli’s The Thievery Restaurant. Manoli comes from an account background having worked at top firm Deloitte, while Julian had worked in internationally respected restaurants such as Rockpool, Alinea and Morimoto. Even though they came from different backgrounds, they hit it off right away through their shared love of hip hop culture.

Soon after BUTTER was born. To them, it’s not just a shop… it’s a way of life.

-Please tell us what inspired you to open the store.

To be better connected to people - food connects people like not much else in this world. To bring together all the things we loved - sneakers, Hip Hop, food and booze! And do it genuinely to create something that had not been done before anywhere in the world. Go beyond the physical - i.e. we are not just about the stores we have - we are about the culture we are part of, which transcends any physical store.

-What is the concept of the store?

BUTTER is a hybrid fried chicken, Hip Hop, champagne and sneaker venue. We are not a restaurant; we are not a bar; we are not a retail store. We are a culture. We are where street meets luxury, and this goes for all parts of our business. We want every single customer to feel like family. You never know what will come out of every relationship you make in life, so be great to everyone!

-What is the best food/item you sell in the store?

The great thing about our store is that we can work and make the most amazing and unique collaborations with brands that not many other stores can do - as we cover the retail and food /drink side of our market. So, perhaps the fairest way of describing our coolest items would be to give 1 food item and 1 retail item. 

As for the food, our Fried Chicken Ramen is perhaps the single food item that has gained a cult following within Sydney and beyond. We are very big fans of Japanese cuisine and our menu is heavily inspired by it - so for us to add our main Pillar of Fried Chicken into our Ramen seemed like a home run, and now 5 years on since we introduced it - it never loses it’s hype! It is only served for 5 months every year over the colder months.

 In terms of our clothing and Butter Brand, just like our menu we are constantly evolving and gaining more and more opportunities to work and design with amazing creatives and artists - most notably our recent collaborations with local brand “Smile & Wave” and our international collaborations with Atsuko Tanaka and Havana Club. We are always looking to work with local or international talent that appreciate and share the same love and passions as our brand!

-Is there anything interesting and crazy thing that happened at the store so far?

Perhaps anytime Post Malone has visited us! He has come through 3 times now I think. The first time was before he had even hit his crazy heights of stardom - but he was as sweet the 3rd time as he was the very first! He is a really good person, probably one of the nicest of all the celebs we have ever had come through Butter. He also kindly wore our very first Butter retail release on stage at FOMO in front of 20k people!

 Our favorite memory of Post Malone was from the last time he came through with Tyler Yaweh. He had had a little bit too much to drink and I took him and Dre London up to the carpark above the Surry site and we had a good chat about life and love and food while he was sobering up a little. He was really interested in food and my takes on cooking and tastes and cuisines etc. This really showed how humble and normal he was even though he was insanely famous by then!

-What is the neighborhood/s like?

We’re very lucky to have 3 venues across Sydney (4 including our current pop-up!) Our stores are not franchised, meaning all shops are operated by a small-young energetic team that are passionate about our brand. We believe in spreading the Butter brand the right way, by covering different areas across Sydney. All our stores have very contrasting yet vibrant and lively neighborhoods, which covers all demographics and audiences to visit our shop. Whether you’re looking to have a fun night out with your friends or have lunch with your family - Butter always has a space for you!
